Here's hoping this is just one in a series of Morrison's Batman arcs being adapted. At the very least I hope we get a Batman and Robin movie at some point down the line.
There's a simple answer to that... Batman has a lot more stories that arguably better and more acclaimed than Superman does.
Plus, in my opinion, almost all the Superman stories that have been adapted into features haven't been all that great compared to the Batman ones (All-Star Superman is the exception for me, as it is the only solo Superman feature that I've really liked).
I know everyone wants diversity, but really, Batman is the most popular character DC has -- unfortunately, even Superman isn't even as popular, though he should be -- so stop complaining about too much Batman, when he is obviously the main seller which enables us to continue getting these animated features.
I disagree with that to some extent, there are plenty of great Superman stories aswell, you could adapt pretty much any of his origin stories but if course that limits you because you can't keep making animated films on his origin. But I guess alot of the best Superman stories are team ups and/or feature various other heroes like Matt Wagners Trinity, Kingdom Come, various from the Superman Batman series, Panic in the Sky, Superman and the Legion of Superheroes, etc. However, there's also amazing solo stories like Exile (which could easily be done and the reasons why could he exiles himself could be covered in flashbacks), Red Son (I o gel this would be problematic to make with the do you have Russian accents or not), Eradication (infact the entire Krypton Man series), Last Son, etc.
I do agree Batman has more but there's a ton of Superman stories aswell as other JLA stories etc that they could have done. But I think the two
Batman films will be awesome so I'm happy.

Please. Batman has Frank Miller's stories and Grant Morrison's run. I wouldn't call the rest "critically acclaimed."
The answer is that people will pick up anything with Batman on the cover, and that the creators are generally Batman fanboys.

Son of Batman is directed by Ethan Spaulding, from a Screenplay by Joe R. Lansdale adapting a Story by James Robinson.
It is. James Robinson wrote the story for the animated film, based on Morrison's work, which was adapted to a screenplay by Landsdale.I thought the story was by Grant Morrison?
You wouldn't call Jeph Loeb's The Long Halloween or Hush and Alan Moore's The Killing Joke acclaimed?
Hush and Long Halloween go back to what you were saying about certain stories being popular rather than acclaimed. I'll give you Killing Joke, though even Alan Moore thinks that one is terrible.
What I'm disagreeing with is that Batman having more films is because of having more critically acclaimed stories, because that doesn't reflect the actual movies so far. Sure you have Year One and the DKR films. But beyond that you have Gotham Knight - not an adaptation of any comic, Under the Red Hood - the comic wasn't acclaimed and the film improved things.
