Overall, it looks like the series ran pretty much intact, except for the cuss words, sped-up credits and general video tweaking to fit the series into the AS timeslots. Cussword edits were handled with record scratches or other obscuring noises that fit Champloo's overall anachronistic hip-hop samurai tone.
Someone was paying attention to the series and respected it, making only those edits absolutely necessary for TV. And handling the necessary edits in a fashion that didn't intrude into the story. Of course, the editing standard today is quite a bit looser than what prevailed just a couple of years ago.
But I wish CN/AS would loosen up on the anime language rules. If it's going to run adult-level anime, it needs to allow adult-level cussing in the late night hours when these shows are being run. (Or maybe their future plans call for a Champloo run on Miguzi?) (^_*)
